Brian Parks Chef/Owner Spanish Caravan Catering
Unlike many chefs who attribute their culinary career to growing up in families that gave them great culinary inspiration, Brian Parks began his cooking career because of a job that afforded him the opportunity to ski to work. Beginning his career in the mountains of Colorado, Brian has spent 8 years in NYC cooking at such high-profile restaurants as Danny Meyer's BBQ joint Blue Smoke and Mario Batali and Andy Nusser's Spanish-inspired Casa Mono. It was his years at Casa Mono working with Chef Nusser that he found a love for the flavors of Spain. After leaving Casa Mono he helmed the stoves as chef at Buceo 95, an Upper West Side tapas and wine bar. Upon moving to Seattle with his wife Jenny, Brian was hired as Chef d’Cuisine at Quinn’s Pub on Capitol Hill.
