Brian Parks Chef/Owner Spanish Caravan Catering

Beginning his career in the mountains of Colorado, Brian spent 8 years in NYC cooking at such high-profile restaurants as BBQ joint Blue Smoke, Brooklyn's Oznot's Dish and Spanish-inspired Casa Mono. It was his years at Casa Mono that he found a love for the flavors of Spain. After leaving Casa Mono he helmed the stoves as chef at Buceo 95, an Upper West Side tapas and wine bar. Upon moving to Seattle in 2009, Brian was hired as Chef d’Cuisine at Quinn’s Pub on Capitol Hill. In 2010 Brian opened Spanish Caravan Catering bringing paella and tapas to the Puget Sound area. In 2019 Spanish Caravan Catering has celebrated 9 years supplying the Tastes of Spain to the Puget Sound region.
